Gourmet Foods is the final class offering for West's Culinary Department. This class is offered to seniors and only. It is required that students have passed with a C or higher in both Foods 1 and Foods 2. Students enrolled in this course will cover units such as chocolate, poultry, beef, restaurant specialties and strawberries. There will also be a brief catering unit that teaches students how to apply cost to a recipe, how to triple a recipe and how to serve to groups of 50 or more. This class is offered second semester only and often has a waiting list.
One of the exciting events for this class is the field trips. Students will take at least two field trips during the semester. One field trip is usually to Oregon State University to tour the campus restaurants. Students will learn first hand the business side to running a campus restaurant as well as additional career opportunities in the field of Culinary Arts. The other field trip is to Portland. Students will ride the train to Portland where they will do food tastings in various venues including Voodoo Donuts, Cacao, Penzey's Spices, Blue Star Donuts and of course the numerous food trucks. This is a memorable trip for many!
At the end of each unit, a home lab is to be completed. A home lab is a requirement and is worth 100 points. Students will need to make one item from scratch that is from the unit. Students may use recipes from class, but it is not required. Students who make a meal from the unit will be given extra credit points.
Students with an excused absence may make-up labs by getting the recipe from class and using the Make-up Lab form to complete the missing lab. It is required that students use the recipe from class when making up work. Please contact the teacher with any questions or concerns regarding this policy.
